Sherry vinegar is produced from the full range of sherry wines (Fino, Oloroso, Pedro Ximénez) and aged in a solera — a fractional blending system of barrels where younger vinegar is added to older as it is drawn out, creating a consistent, complex, multi-aged product. The oxidative aging characteristic of sherry (acetaldehydes, nutty compounds from controlled oxygen exposure) carries into the vinegar: mature sherry vinegar has notes of toasted nuts, dried fruit, caramel, and tobacco, with a rounded, mellow acidity. The DOC Sherry Vinegar from Jerez is protected; minimum aging is 6 months (Reserva: 2 years, Gran Reserva: 10+ years). Applications: in warm salad dressings, in Andalusian gazpacho (sherry vinegar is the authentic acid), in escabeche, in romesco sauce, and as a finishing acid for braises and sauces where a nutty, complex acidity is desired. A few drops over canned tuna or grilled asparagus demonstrates its quality. The best Gran Reservas are used like Traditional Balsamic — by the drop.
